Tomato, Cucumber, & Mint Salad with Yogurt Covering

It’s like summer in a bowl when you eat this tomato, cucumber, and mint Salad with Yogurt covering. There is no mayonnaise in this recipe; instead, full-fat yogurt is used as a substitute, which supplies a rich source of calcium and protein to the dish and also in the salad. This is an excellent source of vitamins A and B – plus the freshness you can only get in the summer.

Ingredients:

  • Plain full-fat yogurt 2 cups
  • Crushed garlic clove 1
  • Ground cumin ½ tsp
  • Thinly sliced mint leaves 1/8 cup
  • Chopped coriander 1/8 cup
  • Large cucumber 1
  • Diced tomato ½ cup
  • Salt and freshly ground pepper, to taste

Directions:

  1. Using a medium bowl, mix the yogurt, garlic, and cumin together.
  2. Remove the seeds and peels from your cucumber, and then grate it over a paper towel. Wrap a paper towel around the grated cucumber and gently squeeze to remove the excess moisture.
  3. Add chopped cilantro, salt, and pepper to the bowl along with the grated cucumber, diced tomatoes, mint leaves, and sliced mint leaves. Mix well.
  4. You can serve it immediately or store it in the fridge for up to two days.

Grapefruit Avocado Salad

We love Grapefruit Avocado Salad in the summertime. We enjoyed it during the summer. It’s a quick, fresh, and light meal salad containing nutrient-dense foods. If you want a tangier dress with olive oil and vinegar

Ingredients:

  • Ripe avocado 1
  • Ruby red grapefruit 1
  • Baby spinach 1 cup
  • Cabbage slices 1 cup
  • Pumpkin seeds ¼ cup
  • Freshly ground pepper
  • Salt

Directions:

  1. Remove the outer membrane from the grapefruit by peeling it. Using a knife carefully cut the grapefruit into sections and remove the membrane that surrounds it.
  2. Cut avocados into thin slices.
  3. Place grapefruit, avocado, and sunflower seeds on a bed of spinach and cabbage.
  4. Add freshly ground pepper and salt to taste.
  5. And add olive oil and vinegar for a tangier
